Join us on the salt marsh, where we’ll forage for herbs whilst working up an appetite for a couple of delicious Wadden Sea hot dogs.

The salt marshes on Rømø are heavily influenced by the sea. Come along and discover the fascinating flowers and herbs that have adapted to this salty and unique environment, where only a select few plants can survive.

Along the way, we’ll gently gather the herbs we’ll need as accompaniments later; out there, we’ll find flavours reminiscent of both cucumber and mustard. You’ll learn to recognise the herbs, how they can be used in the kitchen at home, and what they’ve been used for in folk medicine.

The tour ends at the campfire hut at Tønnisgård, where we’ll prepare and enjoy a couple of delicious Wadden Sea hot dogs together, made with lamb sausages from the Rømø butcher. The freshly picked herbs from the salt marsh are used in ‘pickled gherkins’, ‘remoulade’ and ‘mustard’, and there is also homemade ketchup flavoured with thyme, which also grows wild on Rømø.
